Soup Kitchen. I love soups! My granny had this one soup that my siblings and I always went crazy for. After her passing my mum and my grandmother tried to replicate her signature soup. They got close but never surpassed the original. I wish I had enough personal growth back then when granny still was alive to listen to her teachings. Unfortunately, she didn’t leave a recipe behind. Granny just knew what to do. She had this special feeling for her culinary creations.
With my deep rooted love for soups it was only natural to start with them after I decided to learn how to cook. (Remember me telling you about my resolution here?) My favourite soup of the moment is a simple

Summer Cucumber Soup.

It is really easy to make and you only need very little cooking knowledge to replicate it.

Ingredients

2 cucumbers
Yoghurt
2 cloves of garlic
salt, dill, pepper
crushed ice (if necessary)

Start cooking:


Wash, peel and cut the cucumbers into pieces. Puree the cucumber pieces in the blender with 1 tablespoon of salt. Set aside for twenty minutes.

In a medium bowl combine the puree with yoghurt and dill, mix well until combined thoroughly. Cover the bowl and place it in your fridge for about two hours.

You may want to add a little water right before serving the soup. Adding the water will give your soup a creamy consistency but this step is optional.

Add salt and pepper to taste. Garnish with mint leaves.

I love to add some crushed ice before serving but my family is not so keen on freezing soup – not even in the summer.
